Roast Baby


I made this buffalo roast in class the other day. Honestly, this was the most delightful sauce I have ever had with meat before. It makes my mouth water just thinking about it! You can use beef instead. I improved it a little bit by adding a little slurry (water and corn starch) to make the sauce thicker.

Salt and pepper all sides of roast. Brown all sides of meat in a large saute pan. Place roast in a large roasting pan. Saute one onion and one portabella mushroom, both thinly sliced in 1/4 cup butter. Add 4 cups of beef broth. Pour in 1 bottle of choke cherry syrup. Add to roast. Let cook covered at 325 for about 2 hours.

that actually happened the other day. it was a tough one. we just improvise. sometimes we have vegetarian entrees. one time we had silver beet parcels. they were delicious. i should give you the recipe.

What is choke cherry syrup and where do you get it? What do you add the slurry to?
